鸡皮胶原蛋白多肽锌螯合物结构表征及生物利用率评价

摘要

文章制备鸡皮胶原蛋白多肽锌螯合物(chicken collagen peptide-zinc, CCP-Zn),通过紫外光谱、红外光谱研究CCP-Zn理化性质,并利用果蝇模型评价CCP-Zn的体内补锌效果。结果表明锌离子通过与多肽酰胺Ⅰ带上的羧基进行配位,肽锌结合能力达到152.8 mg/g。膳食添加$\mathrm{ZnSO_{4}}$、CCP-Zn,结果显示与$\mathrm{ZnSO_{4}}$添加组相比,CCP-Zn添加能显著提高果蝇体内锌水平,说明该研究开发的CCP-Zn可以提高锌的吸收利用率,具有良好的补锌效果。

Structure characterization and bioavailability evaluation of chicken skin collagen peptide-zinc chelate

Abstract

Chicken collagen peptide-zinc(CCP-Zn) was prepared. The physical and chemical properties of CCP-Zn were investigated by UV and IR spectra, and the zinc supplement effect of CCP-Zn in vivo was evaluated by Drosophila melanogaster model. The results showed that the zinc ion coordinated with the carboxyl group on the peptide amide I band, and the ability of zinc binding to peptide was 152.8 mg/g. ZnSO $ _{4} $ and CCP-Zn were added to the diet. The results showed that the addition of CCP-Zn could significantly improve the zinc level in Drosophila melanogaster compared with the addition of ZnSO $ _{4} $, which indicated that the CCP-Zn developed in this research could improve the absorption and utilization rate of zinc and had good zinc supplement effect.
